The baked eggroll recipe (also egg-free):

stir fry in sesame oil for a few minutes till softening:
1 large shallot (or small onion)
1-2 cups mushrooms

then add:
4 cloves garlic
1-2 cups finely chopped cabbage

once nicely cooked, add
1-2 cups cooked bean thread or small rice noodles.
soy sauce
LOTS of fresh ground black pepper
dash of rice wine vinegar

stir fry all that till its blended and tasty.

stuff into large eggroll wrappers!

they FREEZE perfectly right here.

preheat oven to 450

just before putting in the oven, pour a little peanut oil in a plate.  take each eggroll, and roll it briefly in the plate to coat with the oil on all sides.  line them up on a baking sheet and bake for 10-20 minutes, till they’re as crispy as you like.  the same baking process applies for fresh or frozen.
